You know what's the worst? You get your ass in gear, give up your sweet parking spot, and go to the store to get ingredients for a recipe you found online, and it turns out to be HORRIBLE. I read the reviews, I look through the ingredients and prep steps, but sometimes I just choose wrong. So, here's a list of recipes I've found online and made, and have turned out really well. One disclaimer: always season more than recipes say. I like my food spicy so I add crushed red pepper and/or cayenne to almost everything I make, but remember to add the flavors you like. And salt. Always salt. Enjoy.
Resolution Toasts - I made these on New Years. They are super delicious, even though the ingredients seem kind of weird.
Apple Cheddar Beer Bread - Don't over-mix. This stuff is bomb.
Black Bean, Corn, and Zucchini Enchiladas - I always give this recipe to new Vegetarians. Simple and good.
Lentil Tacos - Another recipe I always pass to the veg-curious. Also, that chipotle sour cream is good on pretty much everything.
Carmelized Butternut Squash Wedges with Sage Hazelnut Pesto - Amaaaaaxing (maximum amazing)
Twice Baked Sweet Potatoes - Cheap, and the ultimate comfort food. I love these.
How to Make Gyoza - Time consuming, but worth it
Butternut Squash Posole - I made this vegetarian and it's a great hearty stew that's super filling
Stuffed Peppers with Black Beans and Corn - good to make for the week. Cover in salsa when you eat them. And i like to cut the pepper in half long ways because you get more crispy rice surface area.
Shaksouka (or eggs poached in tomato sauce) - I don't really follow this recipe, but the dish is my go-to quick dinner. I use BF's amazing homemade marinara, poach a few eggs in it, and eat with toast. Yummy, relatively healthy, and filling even for this hungry man.
Mom's Skinny Cheesecake - Yum.
I'm sure I'm forgetting some good ones. But these are the ones in recent rotation. Now I'm hungry.
